I want to go from station A to station C via station B, can I buy a ticket from A to C, and get off in B, stay 2 hours and get back on B and continue to C?

It depends on the route and type of ticket.

Point-to-point tickets / Day Passes: YES
Zone-based tickets: YES, IF you can reach C still within the ticket’s validity.
Supersaver tickets: NO

I want to buy an one way ticket, from brugg ag to zurich airport, but I want to get off in zurich HB statation, I want to stay in the zurich for 2 hour or so, and go back to zurich HB and continue to zurich airport, can I just buy the ticket from brugg to zurich airport?

If you go to www.sbb.ch and look up times and prices for this trip you will see that the ticket is valid for 2 hours only. So you will need separate tickets.
