I’m going to take a trip leaving Tirano with a stop in St. Moritz and then I’ll go to Zurich. I would like to know if I can use a day ticket to do this route on the same day.

Yes, there is such a thing named => Saver Day Pass, check the availability for your travel date.
Note that this ticket type is basically not refundable in case of a change of plans.

Also note that seat reservations for the Bernina Express (if applicable) would need to be booked separately on the operator’s rhb.ch website. But there are also a few coaches on the Bernina Express train (= PE in the timetable) without seat reservations, and also other R or RE trains on the same Bernina route without any reserved seats.

If you buy a normal ticket for a route it is valid for a whole day, and does permit you to make stopovers at your own discretion. The only rule is that you keep travelling in the same direction after your stop.

But a Saver Day Pass is probably going to be the cheapest option for you, unless you wait till the last moment with purchase.
