How do I get seat reservations now that I have purchased the tickets?
Ticket says I have to download the ticket and once I do that it is non refundable. Will it be easy to
get ticket printed at the hotel I will be staying? Recommendations?

1/ I suggest the left side in the direction of travel. Please note the train can also be in the false direction due to operational reasons.

3/ You can also show the PDF ticket on your smartphone or perhaps obtain a copy at the ticket office in Innsbruck.

2/ You can reserve seats on oebb.at. Don’t forget to select the seats on a plan:

It says on SBB that the ticket must be downloaded for the Innsbruck to Zurich. Does that mean printed also? or what exactly does it mean?
I have 30 minutes between trains at Innsbruck, is that enough time to print ticket at the office if needed?
Thank you as you can see I have never used the train system in Europe.

Every country has own rules. In Austria, this rule applies:

Yes, PDF tickets can also be viewed on laptops, tablets and smartphones within Austria. A photo ID with proof of age and, if applicable, a discount card must be presented with the ticket. The PDF ticket must still be printed on paper (A4 portrait format) for journeys to and from other countries.

However, you start your journey in Austria and it is the same staff until Zurich. They can certainly read your ticket as PDF file on your smartphone.

You say you have 30 minutes between trains in Innsbruck. What is the trip you have booked? Where have you booked it? Where are you starting?
If you book a ticket from OBB the ticket is only actually created the moment you download it. And then once you have done that it can indeed no longer be refunded. If you booked it via SBB they probably just booked it with OBB on your behalf.

AFAIK it is not the same staff till Zurich, as the crews change in Buchs. Anyway, I would suggest to the OP that he just print out his tickets at the hotel. Most hotels can do that for you.

Usually the same crew remains on the trains from Zürich to Innsbruck and from Zürich to Munich. They may have different devices to check the tickets.

If you booked this on SBB you should have one ticket from where your trip starts to Zurich, not separate tickets <somewhere> to Innsbruck followed by Innsbruck to Zurich. Anyway, downloading the ticket 5 minutes before the journey would work too. You only need to have the ticket before you board your train.
