If I come from Luzern to visit House of Laderach at Bilten but my final destination is Zurich Flughafen, how to buy train ticket(s)? Shall I buy two separate tickets 1) one for Luzern -> Bilten, and 2) the other for Bilten to Zurich Flughafen, or just one ticket Luzern -> Zurich Flughafen?

For 2), can I stop at Zurich HB to do some sightseeing in the Old Town?

You can buy a point-to-point ticket for Luzern to Zurich Airport via Bilten. Avoid Supersaver tickets as they do not allow a stop-over in Zurich.

You can also split it into two tickets, as suggested by you. Simply keep in mind that the Bilten to Zurich Airport ticket will be a zone ticket valid for 3 hours. It will not allow you to stop in Zurich as you must have completed your journey within 3 hours from the time of purchase. The point-to-point will, however.

What about stopping at Zurich HB on my way to Lindt Home of Chocolate? Can I do that with the Railaway combined ticket? Or do I need to go straight to Lindt so that I won’t miss my expected admission time slot? The ticket order process says reservation for the chocolate tour is not needed with the combined ticket. So does it mean I can spend some time in the town before heading to the museum? Thanks!

It all depends on the ticket type. If it is a Lucerne to Kilchberg point-to-point ticket, you can.

I suggest going to the SBB Travel Office in Lucerne to buy the (Railaway) ticket. Let them know that you would like to spend some time in downtown Zurich. They will issue the right ticket for you.
